Preheat the oven to 200°C. Peel the potatoes and and cut into wedges. Place the wedges into a mixing bowl with all other ingredients and toss until well combined.

Spread the seasoned wedges onto a baking tray and cook in the oven for 15 minutes. Once golden-brown, turn the potatoes and bake for a further 10 minutes. Allow to rest.

Pan fry your pita breads over a low-medium heat for 2 minutes. Allow to cool.

Place all salad ingredients into a mixing bowl and toss to combine.

Generously spread BioTzatziki over the pita breads (the creamier, the better), then add the potato wedges, salad, and enjoy!
