Creamy avocado pasta with sundried tomatoes

Creamy, fresh and punchy, this avocado pasta sauce is loaded with vibrant greens and healthy fats.

Method

  1. Cook pasta to packet instructions.
  2. Combine all sauce ingredients in a blender. Blitz until smooth.
  3. Once pasta is cooked, drain and return to pot. Pour sauce over cooked pasta and stir through.
  4. Serve pasta into bowls and top with sundried tomatoes, extra basil and nutritional yeast.

TIP: Nutritional yeast, aka ‘nooch’, is an inert form of yeast with a delicious cheesy flavour. Find it at your local supermarkets, healthfood, or bulk food store.
