Roast cauliflower salad

Simple and delicious, this roast cauliflower and lentil salad is packed with nutritious ingredients, and perfect as a main meal or side dish.

Dressing

Method

  1. Preheat oven to 180C.
  2. Chop cauliflower into florets and toss in olive oil. Feel free to add any extra spices here such as cumin, thyme or sumac. Roast on a lined baking tray for 25mins or until tender.
  3. Drain and rinse lentils. Add to a large bowl.
  4. Whisk together dressing ingredients.
  5. Add cooked cauliflower and remaining salad ingredients and toss.
  6. Drizzle with dressing and serve.
