Traffic light veggie patties

In nature, colour can be an indicator of a high concentration of nutrients, and these veggie patties are no exception. The traffic light colours come from the beneficial phytochemicals present in the spinach, carrot, and beetroot. Versatile and nutritious, you can use these veggie patties in salads, burgers, or nourishing bowls.

Method

  1. Preheat the oven to 180°C.
  2. Bring a saucepan of water to a boil, then add the sweet potato and cook covered for 10 minutes or until soft.
  3. Add the quinoa and red lentils to another saucepan along with 2 cups of water. Bring to a boil and cook for 12 minutes or until all the water has been absorbed.
  4. Transfer the cooked sweet potato and cooked quinoa and lentils to a large bowl. Add the sultanas, garlic, vegetable broth, cumin, mustard seeds, cinnamon, and a pinch of salt. Mash with a fork until combined.
  5. Divide the mixture into 3 bowls. In the first, mix in the carrot. In the second, mix in the beetroot. In the third, mix in the spinach.
  6. Form the mixture from each bowl into 3 patties, making 9 in total. Place the patties on a baking tray and sprinkle with sunflower seeds. Bake in the oven for 50 minutes.
  7. Serve your patties as desired. We served ours in a nourish bowl with rocket, roast pumpkin, grilled corn, avocado, edamame, sauerkraut, red cabbage, and a squeeze of lemon.
