Method
- Preheat the oven to 180°C.
- Bring a saucepan of water to a boil, then add the sweet potato and cook covered for 10 minutes or until soft.
- Add the quinoa and red lentils to another saucepan along with 2 cups of water. Bring to a boil and cook for 12 minutes or until all the water has been absorbed.
- Transfer the cooked sweet potato and cooked quinoa and lentils to a large bowl. Add the sultanas, garlic, vegetable broth, cumin, mustard seeds, cinnamon, and a pinch of salt. Mash with a fork until combined.
- Divide the mixture into 3 bowls. In the first, mix in the carrot. In the second, mix in the beetroot. In the third, mix in the spinach.
- Form the mixture from each bowl into 3 patties, making 9 in total. Place the patties on a baking tray and sprinkle with sunflower seeds. Bake in the oven for 50 minutes.
- Serve your patties as desired. We served ours in a nourish bowl with rocket, roast pumpkin, grilled corn, avocado, edamame, sauerkraut, red cabbage, and a squeeze of lemon.
