- Preheat the oven to 175°C. In a mixing bowl, combine the macadamias, almonds, dried cherries, flour, and coconut sugar. In a separate mixing bowl, combine the melted coconut oil, milk, and rice malt syrup. Then, mix the dry ingredients into the wet ingredients and combine well.
- Spoon 1 tbsp measures of the mixture onto a lined baking tray. Carefully use your spoon to shape and smooth out, then bake in the oven for 15 minutes, or until golden. Watch carefully so they don’t burn. Allow the florentines to cool completely once done.
- In the meantime, melt the dark chocolate in a double boiler for a couple of minutes until it’s melted and smooth.
- To serve, drizzle the cooled florentines with generous amounts of chocolate on each, and enjoy! If it’s a warm day, store any leftovers in the fridge to prevent the chocolate from melting. They will firm and crisp up.
TIP: In place of dried cherries, you can use any dried fruit of choice.
