Sausage rolls

Exceedingly Vegan

Heartwarming rolls filled with walnuts, mushrooms and sundried tomatoes for a healthy vegan twist on a classic party favourite.

Ingredients

Makes 4

Method

  1. Add the walnuts into a food processor until you get a coarse flour. Transfer to a large bowl and clean the processor.
  2. Chop up the red onion and mushrooms. Sauté the onion in oil until softened and then add the mushrooms and cook both until the liquid has evaporated and it becomes a sticky mass. Add both to the food processor together with the sun-dried tomatoes and miso paste. Process until it becomes smooth. Add to the bowl with the walnut flour.
  3. Add remaining ingredients (except pastry) into the bowl as well and mix together until you get a sticky dough-like mix. Form balls with your hands and then roll them out on a wooden board to create four sausage shapes.
  4. Preheat the oven to 180°C. Roll out a puff pastry sheet and cut into four quarters. Roll the sausage in the sheet and then fold in the ends so it’s encased on all sides. Flatten a tiny bit with your hands, then make small horizontal cuts.
  5. Place on a baking tray lined with baking paper and bake in the oven for 25 minutes or until the puff pastry has a nice golden glow. Take out of the oven and enjoy.
