Method
TO MAKE THE TEMPEH
- In a bowl place your tempeh, then using a fork break it up until the beans have separated.
- Finely chop onion and place in a hot frying pan with vegetable oil. Fry until onion becomes translucent then add your tempeh.
- Fry mixture for 3–4 minutes then add your other ingredients, stirring until the mixture is well combined.
TO MAKE THE SALSA
Mix all ingredients together.
TO SERVE
- Simply place tempeh mix on your tortilla.
- Top with salsa and drizzle with coconut milk.
- Serve with avocado, radish, fresh coriander and lime wedges.
