Method
- In a shallow bowl, whisk together all the batter ingredients.
- Add the vegan butter or coconut oil to a non-stick pan over medium-high heat.
- Dip each side of the bread into the batter briefly, then add the bread to the pan and cook for 2-3 minutes on each side, or until golden brown.
- Serve with maple syrup and fresh strawberries or other seasonal fruit. Enjoy!
