Method
- Place pumpkin in a medium pot and fill with water until the pumpkin is only just covered. (You will be using this water for the sauce later, so less water is better).
- Boil the pumpkin for about 12–15 min or until soft.
- In another pot, cook your pasta as per packet instructions.
- Once the pumpkin is soft, transfer to your blender or food processor along with the water it’s been cooked in.
- Add the rest of the ingredients into your blender and blitz on high until you have a smooth and creamy sauce.
- Once your pasta is ready, drain and place back in the pot. Pour over your cheesy sauce and re-heat if needed.
- Garnish with salt, pepper and fresh parsley to taste.
