Vegan mac and cheese

Everybody loves macaroni cheese! And what’s not to love? It’s comfort in a bowl – flavourful, homely, and delicious.

Method

  1. Place pumpkin in a medium pot and fill with water until the pumpkin is only just covered. (You will be using this water for the sauce later, so less water is better).
  2. Boil the pumpkin for about 12–15 min or until soft.
  3. In another pot, cook your pasta as per packet instructions.
  4. Once the pumpkin is soft, transfer to your blender or food processor along with the water it’s been cooked in.
  5. Add the rest of the ingredients into your blender and blitz on high until you have a smooth and creamy sauce.
  6. Once your pasta is ready, drain and place back in the pot. Pour over your cheesy sauce and re-heat if needed.
  7. Garnish with salt, pepper and fresh parsley to taste.
