Whole roasted Mexican onions with salsa

Bright, bold and delicious, this is the perfect side dish to take Mexican night to new heights.

Method

  1. Preheat the oven to 200°C and line a loaf tin with baking paper.
  2. Mix together the oil, paprika, cumin, garlic and salt in a small bowl.
  3. Using a sharp paring knife, score a cross on the top of each onion, then rub the marinade all over them, heaping some of it on the scored tops.
  4. Place the marinated onions in the lined loaf tin so that they are packed tightly together. Place the tin in the oven and bake the onions for approximately 40-45 minutes until they are browned and fork tender. 
  5. While the onions are roasting, combine the salsa ingredients in a medium bowl and mix well.
  6. When ready to serve, spoon the salsa into a serving bowl, and place the roasted onions on top.
  7. Drizzle taco sauce over the onions. Garnish with oregano leaves and grated vegan parmesan. Serve immediately.
