Method
- Preheat the oven to 200°C and line a loaf tin with baking paper.
- Mix together the oil, paprika, cumin, garlic and salt in a small bowl.
- Using a sharp paring knife, score a cross on the top of each onion, then rub the marinade all over them, heaping some of it on the scored tops.
- Place the marinated onions in the lined loaf tin so that they are packed tightly together. Place the tin in the oven and bake the onions for approximately 40-45 minutes until they are browned and fork tender.
- While the onions are roasting, combine the salsa ingredients in a medium bowl and mix well.
- When ready to serve, spoon the salsa into a serving bowl, and place the roasted onions on top.
- Drizzle taco sauce over the onions. Garnish with oregano leaves and grated vegan parmesan. Serve immediately.
